Mexican Lasagna

1 and 1/2 lbs. ground beef
1 pkg. taco seasoning
1 can (14-16 oz) diced tomatoes
1 egg
2 cups cottage cheese
1 cup Pepper Jack cheese (or mozzerella if you prefer)
12 small corn tortillas

Optional toppings:
shredded lettuce
shredded cheddar cheese
chopped tomatoes
sliced olives
guacamole
sour cream
salsa

Lay 6 tortillas over the bottom of a 9 x 13 pan. Brown and drain ground beef. Add taco seasoning and diced tomatoes; mix all together. Spread over tortillas. Lay last 6 tortillas on top of the meat mixture. Mix together egg, cottage cheese and Pepper Jack cheese. Spread this over the tortillas. Bake at 350 degrees for 30 minutes. Serve with the optional toppings your family enjoys. If taking to a potluck, decorate the top of the lasanga with the toppings so people can just scoop one scoop and get their toppings with the lasanga.
